It's getting warmer and salad is a good meal option for those days when you want something light. How about a warm salad to change things up every once in a while? Today's warm steak salad sounds a little fancy but it's so easy to put together. Check it out! (中文)
Ingredients (Yields 2 servings):
200g sweet potato, cut into bite-sized pieces
2 tbsp vegetable oil
300g beef, cut into strips
1/4 medium red onion, thinly sliced
2 cloves garlic, chopped
2 tbsp balsamic vinegar
2 tbsp olive oil
1/2 tsp sugar
60g kale, roughly chopped
1 tbsp toasted sunflower seeds
Salt and pepper, to taste
Feta cheese, to taste (optional)
Instructions:
Roasted Sweet Potatoes
1. Preheat the oven to 350°F(180°C).
2. In a mixing bowl, add sweet potatoes, 1 tbsp vegetable oil, salt and pepper. Mix well.
3. Line a baking sheet with parchment paper and spread sweet potatoes evenly. Place it on the middle rack in the oven and roast for 20 minutes.
Steak
1. Pat the beef dry with paper towels and season with salt and pepper.
2. Heat a non-stick pan over medium-high. When hot, add 1 tbsp vegetable oil, beef and red onions. Stir occasionally until beef is browned. About 4 to 6 minutes.
3. Turn heat off then add garlic and 1 tbsp balsamic vinegar. Stir until fragrant. About 1 minute.
Dressing and Kale
1. Mix 2 tbsp olive oil, 1 tbsp balsamic vinegar, sugar, salt and pepper. Whisk until sugar is dissolved.
2. Add kale and toss until it is evenly coated.
To Assemble
Place kale on the bottom, add beef and roasted sweet potatoes. Sprinkle roasted sunflower seeds and feta cheese.
Notes:
1. Substitute sweet potato to carrots or butternut squash as preferred. Cooking method is the same.
2. To create crispy edges on the roasted sweet potatoes, turn the oven off once it is done cooking and leave them inside for extra 10 minutes.
3. Buy toasted sunflower seeds if you are lazy like me. If using untoasted seeds, heat a non-stick pan over medium heat and add the seeds to the dry pan. Stir and let it toast until golden-brown. About 4 to 5 minutes. Keep and eye on them because they can burn quickly!
This recipe consists a few different steps, but they are all easy and quick. The roasted potatoes is probably going to take the longest time, but really all you do is wait and let the oven do its thing. The acidity from the balsamic vinegar is really appetizing in warm days.
