Recipe│Lentil & Veggie Soup

This is a hearty, filling and flavourful lentil soup. It's easy and delicious and made with least prepping which is always my goal when it comes to cooking. I added extra starch to make it more filling. You can also pair it with some pasta or rice to make it a big meal. So keep reading! (中文)

Ingredients (Yield 5 to 6 servings):
1 tbsp vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
1/2 tsp ground cumin
1 tsp dried oregano
1 cup red lentil, rinced
1 can diced tomato (796ml/28 fl oz)
1 can mix veggies (398ml), rinced
1 medium potato, cut into bite-sized pieces
2 cups water or stock
3 stalks kale, roughly torn
Salt and pepper, to taste
 
Instructions:
1. In a big soup pot heat oil on medium. When hot, add onion and saute until translucent. About 5-7 minutes.
2. Add garlic, cumin and oregano. Cook until fragrant; about 1 minute.
3. Add lentils, mix well.
4. Add diced tomato and fully mix with lentils.
5. Add mix veggies and potatoes. Mix all ingredients.
6. Pour in 2 cups of water or stock, until all ingredients are covered.
7. Bring the heat to high. When boiling, lower to medium heat and let it simmer for 25 minutes.
8. Stir in kale and cook for 5 minutes. 
9. Turn heat off. Taste and adjust seasoning with salt and pepper.
 
I know the steps seem a lot, but it really is dump and mix and then let it simmer until it's done. You'll only have to chop the onion, garlic and potato. If you have a garlic crusher, you don't even need to mince the garlic!
