Recipe│Lazy Mushroom Risotto

One of my favorite easy and lazy vegetarian risotto with good texture and earthy flavour is definitely this lazy mushroom risotto. Easy to make and so delicious! I have to share it here. (中文)

Ingredients (Yield 3-4 servings): 
1 tbsp vegetable oil
1 tbsp + 1 tsp butter
1/2 medium onion, chopped
5 mushrooms, chopped
2 cups cooked rice
1 tsp dried oregano
1/4 cup white wine
1 cup water or vegetable stock
Salt and pepper, to taste
 
Instructions: 
1. Heat a pan on medium, add vegetable oil and 1 tbsp butter. Let the butter melt.
2. Add onion and a pinch of salt, then cook until it is translucent.
3. Add mushrooms, a pinch of salt and pepper and cook until softened.
4. Add rice, dried oregano, a pinch of salt and pepper. Mix well and add wine; the wine should be absorbed pretty fast.
5. Add 1/4 cup of water or stock at a time, when it is absorbed, add next portion until all liquid is almost fully gone.
6. Add 1 tsp of butter (cover risotto if you have a lid) and let the butter melt. About 30 seconds to 1 minute.
7. Open and mix well. Adjust seasoning if needed.
 
Notes:
1. Cooked rice is used in this recipe so there is no need to buy risotto rice and it also cooks faster. It is recommended to use medium gran rice for similar texture and results.
2. Use a variety of mushrooms to amp up the flavour.
3. Garnish with some chopped parsley as preferred.
