Recipe│Granola Two-Way

This is the granola recipe I've been making all the time; in fact, the only granola recipe I've been making. There are no mess making two flavours at one time and you definitely need to check this recipe! (中文)

Ingredients: 
Maple and Cinnamon
1 1/4 cup oats
1 1/2 tbsp sugar
1/8 tsp salt
1/2 tsp cinnamon
1/8 cup melted coconut oil
1/8 cup maple syrup
1/4 tsp vanilla extract
1/2 cup trail mix
 
Chocolate
1 1/4 cup oats
1 1/2 tbsp sugar
1/8 tsp salt
2 tbsp cocoa powder, sifted
1/8 cup melted coconut oil
1/8 cup maple syrup
1/2 cup trail mix
 
Instructions: 
1. Preheat the oven to 325°F(160°C).
2. In 2 separate large mixing bowls, add oatmeal.
3. Maple and Cinnamon
    I. Add sugar, salt and cinnamon. Mix well with oatmeal.
    II. Add coconut oil, maple syrup and vanilla extract. Mix until oatmeal is all well-coated.
4. Chocolate
    I. Add sugar, salt and cocoa powder. Mix well with oatmeal.
    II. Add coconut oil and maple syrup. Mix until oatmeal is all well-coated. If oatmeal still looks dry and separated, add 1 tbsp maple syrup.
5. Prepare 2 baking sheets lined with parchment paper. Spread oatmeal evenly thinly.
6. Place baking sheets in the oven and bake for 18 to 20 minutes. At 10-minute mark, take out the oatmeal and gently re-mix it in the sheets and place them back into the oven. Switch levels and bake for another 8 to 10 minutes, until oatmeal turns dark golden.
7. Let the oatmeal cool for 10 minutes. 
8. In each mixing bowl, add trail mix and mix with the cooled oatmeal.
 
Notes:
1. Substitute coconut oil to any neutral flavoured vegetable oil as preferred.
2. Substitute maple syrup to honey as preferred.
3. Use any trail mix, nut mix, dried fruit mix of your choice. Add as much or as less as you desire!
4. Add some cacao nibs for more crunch and intense cocoa flavour.
 
To Assemble a Yogurt Bowl
1. Any yogurt of your choice. I recommended plain yogurt because the granola and fruits already come with some sweetness and their own flavour.
2. Add fruit of your choice and granola as you desire.

Notes:
If using diced apple, keep the unused apple in slated water and keep it in the fridge. It lasts well up to 2 days.
 
That's my go-to granola recipe(s). A lot of store-bought granolas have way too much sugar so this recipe is pretty good that you can control the amount of sugar and the type of sweetener you use. I really hope you give it a try and let me know how you like it!
