Recipe│Avocado Salad and Avocado Toast

It's getting hot! This avocado salad is super easy to make, refreshing and full of protein. Good for the days you don't feel like eating heavy meals or you have a beach body fitness goal. (中文)

Ingredients (Yield 1 serving): 
1/2 ripe avocado
100g tofu, cut into cubes
1 tbsp lime juice
1 boiled egg, cut in half
1/3 cup corn kernels
1/3 cup bell pepper, diced
1/2 cup cherry tomatoes, halved
1 green onion, chopped
Salt, pepper and chili flakes, to taste 
 
Instructions: 
Avocado Salad
1. In a bowl, add avocado, tofu, lime juice, egg, salt and pepper. Mash them to the consistency you prefer (chunky or creamy).
2. Add corn, bell pepper, green onion and chili flakes. Mix well.
3. Taste and adjust seasoning if needed.

Avocado Toast
Toast your favorite bread and spread the salad on top. Add more pepper or chili flakes for extra flavour. 
 
Notes:
1. Use a whole avocado and make a doubled portion. It stores well in the fridge for up to 2 days.
2. Medium firm tofu performs better in terms of texture, but use whatever kind of tofu you have access to.
