Recipe│Pesto and Shrimp Pasta

 

Using pesto in your pasta is no-brainer easy. How about making it more flavourful with some garlicky shrimp?! (中文)

Ingredients (yields 1 serving):
60g dry pasta of your choice
1/2 tbsp vegetable oil
2 cloves garlic, chopped
1 cup frozen raw shrimp
1.5 tbsp pesto
Salt and pepper, to taste
1 tbsp lemon juice
Parsley for garnish, chopped (optional) 

Instructions:
1. Cook pasta until 1 minute before al dente as instructed on the package.
2. Heat a pan on medium, when hot, add oil, garlic, and shrimp. Cook until shrimp is almost all turned red.
3. Add pesto and mix well.
4. Add pasta and cook for 1 minute. Adjust seasoning with salt and pepper.
5. Turn off heat and add lemon juice. Garnish with chopped parsley.
 
Notes:
Don't worry about the water from frozen shrimp in the pan, it's used to thin out the pesto in this recipe.

This recipe is super easy. There is not much difference of how people normally use pesto in their pastas, but adding some lemon juice gives it some freshness and it goes well with the shrimp! Hope you like this simple recipe!
